Pinky’s is not new the to Tampa AM scene, but it is such a pleasant, delicious experience that it’s worth a brief shout. Owned and operated locally, Pinky’s provides a basic and conventional menu that has the perfect amount of re-imagination. Eggs come in any form you like – including several delicious frittatas. Oatmeal is thick and hearty, with granny smith apples and cinnamon sugar to top. Pancakes come in the form of bread on the breakfast sandwich (2 pancakes, ham, and eggs stacked).
You can also order the day’s specialty, which could be pecan-cilantro biscuits or a variation of eggs benedict. The food is decadent but Pinky’s isn’t a greasy spoon…I think of it as modern comfort food, without the oil slick.
My favorite is the 2 egg breakfast, which comes with a protein and several delicious carbs, and can be customized with egg whites-only and turkey sausage for the gym bunnies. Add bottomless self-serve coffee and a serving of kitsch diner decor and seating that feels more like Portland than Tampa…and you have a cozy, comfort-food-if-you-like, health-if-you-don’t setting that is an instant regional favorite. Expect lines to peak around 10am on the weekends. Snag a first-come-first-served seat at the bar and skip a table! It’s more fun to watch cinnamon rolls get iced anyway.
